5. Freezing The Top Tier |
Here's the complete (and simple!)
procedure for freezing the top layer
of wedding cakes so they can be eaten on the first wedding anniversary.
This procedure can be used on most cakes, and should keep them fresh enough to
eat for up to 12 months.
1. Freeze the cake unwrapped for 6 hours
to allow for the icing to set.
2. Wrap the cake with 2-3 layers
of plastic wrap, one layer of aluminum
foil and then seal the whole thing in
an airtight container.

The cake should be removed from the
freezer at least 12 hours before
serving and defrosted in its wrappings
to encourage the condensation to
form on the wrappings rather than
on the cake itself.
